USING EGGS IN COCKTAILS

Foam-vs-ice
Bartenders have come up with a variety of techniques over the years to accomplish this delicate balancing act of foam-vs-ice, and all remain hotly debated. Some employ the “reverse dry shake,” in which egged ingredients are shaken with ice first then given an iceless dry shake after. Some dry shake but then swirl or stir the drink gently with ice, rather than shaking it a second time, to avoid overly diluting the foam with water, doesn’t work for me. Some even use handheld immersion blenders to power-froth a mixture, it creates too much foam in my opinion.
Whichever technique is employed, eggs can add a fun, interesting dimension to an otherwise basic cocktail like a whiskey sour or bramble for example. The most effective technique for me is the “dry shaken” using a Parisian shaker. With the right execution, time and ingredients chosen, the results are extraordinary aesthetically and tastefully.
REASONS TO USE EGGS IN COCKTAIL
Adding Eggs to drinks is a tradition that dates back more than a century. Besides novelty, the egg whites give your cocktail a rich creamy texture and a beautiful foamy cap with very little effect on the taste. Unpasteurized egg whites are basically odourless and tasteless, so their contribution is entirely textural.
Just like a mousse or meringue, drinks that call for egg white also include citrus juice and some sugar syrup along with the liquor and egg. Agitating this mixture creates luxurious foam.
MIXING EGGS INTO COCKTAILS
Separate the egg safely from its shell and avoid using the shell. Then, add all the ingredients (including the egg) in a cocktail shaker and shaken without ice (Dry shake technique). This process allows the egg protein to begin to unravel and form foam without being diluted with melting ice. Ice is then added to the shaker to more violently agitate the mixture. this second phase cools the liquid and strengthens the foam. When strained the cocktail will have a velvety and beautiful frothy, longer cap.
Now that we’ve established the theory of using egg whites in cocktails, its time to practice, by making a SLOE GIN FIZZ
SLOE GIN FIZZ RECIPE
- 60ml sloe Gin
- 20ml Lemon juice
- 15ml simple syrup
- 1 Egg white
- Top up with soda water
DIRECTION
- Add all ingredients to a cocktail shaker.
- Shake vigorously without ice for 7 – 10 seconds.
- Add ice and shake until cool through, about 12-15 seconds.
- Strain into a collins glass over ice and carefully top with a splash of soda water. (To avoid spillage, add soda water slowly). The carbonation will add a lot of volume to the egg foam. Enjoy

If you’re after a cocktail that’s tropical and fruity, a Mai Tai is the one for you.
The recipe comprises of four main ingredients – Rum, lime juice, orange liqueur and orgeat syrup (Monin’s Almond Syrup is just fine). You can then play around and add further ingredients including fresh juices and grenadine.
The Mai Tai drink is a festive and fun cocktail, great for parties or impressing guests! It’s great as a: Signature drink, Cocktail hour drink, Party drink, Happy hour drink, Dinner party drink.
Honestly, it tastes like sunshine in a glass!
INGREDIENTS
- 1 ½ ounces (3 tablespoons) aged rum
- ½ ounce (1 tablespoon) orange liqueur: Curaçao, Cointreau or Grand Marnier
- ¾ ounce (1 ½ tablespoons) lime juice
- 1 ounce (2 tablespoons) orgeat syrup
- ½ ounce (1 tablespoon) dark rum
- For the garnish: Fresh mint, cocktail cherry, pineapple slice, lime wedge
DIRECTIONS
- Place the aged rum, orange liqueur, lime juice, and orgeat syrup in a cocktail shaker. Add ice and shake until cold.
- Strain the drink into an ice-filled glass. Top with the dark rum. Garnish with fresh mint, a lime wedge, cocktail cherry and pineapple slice.

Seems almost everyone has got a favourite “To-Drink” beverage when summer arrives. for some, it’s the Pina Colada, while for many others sunny California, classic margarita, and mojito are on their top list.
Watermelon Vodka makes up the perfect beach vacation cocktail with friends and most especially an all-girls beach retreat.
Some people like to infuse their watermelon with vodka, but I like to make these simple watermelon cocktails instead!
They’re so easy to make, refreshing and perfect for any summer occasion. They’re made with fresh watermelon, vodka, lime juice and some optional club soda, sparkling water or even sprite if you want them fizzy and extra sweet.
INGREDIENTS
- 8 cups chilled watermelon
- 11.5 oz. coconut water
- 4 tablespoons fresh lime juice
- 1 cup vodka citron (citrus flavored vodka)
- mint, strawberry, and lime for garnish
DIRECTIONS
- Cut a hole in the top of the watermelon and scoop the top out
- Put the bottle in the hole and leave it for 6-12 hours (or overnight).
- Add the watermelon juice (you should be left with 1 cup) to a cocktail shaker with the vodka, lime juice and sweetener if using. Shake with ice.
- Vodka will absorb into the watermelon. Don’t forget to eat
- Pour over ice and enjoy! Make it
- Add mint,strawberry and lime wedge for garnish

Apple Cider Bourbon Cocktail

Fall Cocktail
Apple cider is one of my favourite seasonal drinks and also makes for a tasty cocktail when mixed with a little bourbon and ginger beer. This drink is super refreshing, the ideal fall beverage for a Bonfire with close friends or just staring at the fall of the sun.
INGREDIENTS
- 1 ounces bourbon
- 2 ounces apple cider
- 1/2 teaspoon of lemon juice
- 2 ounces of ginger beer
- 1 dash orange bitters
INSTRUCTION
- Combine the bourbon, cider, ginger beer and lemon juice in a mixing glass and stir with ice. Strain it into a cocktail glass.
- Add a dash of orange bitters and garnish with apple slices and a cinnamon stick.
- Enjoy!!
