CABERNET SAUVIGNON

They’re usually full and rich like Pinot Noir, but since they’re made from a blend of grapes instead of just one, they may help balance the flavor of your dish better. MERLOT

Depending on the quality, Merlot can range from simple to mind-blowingly complex. PINOT NOIR
They’re silky, earthy, acidic, smooth and come light- and medium-bodied. It tends to be fruity and earthy in flavor with berry and mushroom notes. Pinot Noir aged in oak barrels, like Cabernet, isn’t best for quick sauces, but rather low-and-slow recipes. Keep an eye out for red Burgundy when you’re at the liquor store too—some winemakers use that name for Pinot Noir after the region where the grapes are grown (they may be a little pricier). Use Pinot Noir for salmon or stew recipes.
CHIANTI
If you’ve never sipped a glass alongside an Italian dinner, you’re missing out big time. Chianti is famous for its herbaceous, earthy, peppery flavor, but it can also be on the fruity, delicate side. Sangiovese wines, named for the main grape used in Chianti, have a signature tart acidity and spiciness that make them an uncanny stand-in for Chianti. Chianti is best for tomato sauce, pasta dishes and pan sauces rather than hearty stews. Even higher-quality Chianti that’s more tannic and fuller-bodied isn’t bold or dense enough to do a cabernet sauvignon’s job.
TIPS FOR COOKING WITH RED WINE
- Cooking wine and regular wine are two different things—so you shouldn’t substitute them interchangeably.
- Avoid using old wine. If you opened a bottle over a week ago, it’s been oxidizing and likely tastes different than you remember.

Whiskey- Wooden casks for spirit maturation
The role “wood” plays in ageing and maturation of whiskey
Its no surprise that 60% to 80% of the total flavor in a whiskey whether scotch or bourbon, aged rum or tequila, is uniquely attributed to the oak in which it matures. Once the fermented wash is distilled, it is the decision of the master distiller to decide whether the new spirit has to be matured and aged, and which oak flavors to develop and try to attain.
Maturation and ageing of spirit is carried out in oak wood casks. Hence, there are different varieties of oak wood used to make casks. The process involved in the making of wooden casks starts from sourcing of oak, seasoning of oak, shaping of the cask by using staves, toasting & charring etc. The process involves harvesting of tall oak trees and then seasoning them by drying for six to eight months or more. Subsequently, the seasoned wood is cut into staves and shaped into a bulging cylinder and bound together by metal hoops in the cooperage. The head and bottom of the cask are flat and each is secured into the staves by a grove. No glue, paraffin, or nails are used in making barrels.
Below is the list of some of the important casks and their capacity used for the maturation of spirits covering whisky, rum, tequila, brandy and wines including fortified wines namely sherry and Port wine.
A British Barrel has a capacity of 160 liters whereas the American Barrel has the capacity of 200 liters.
A Firkin cask is a quarter size of the British barrel and has a capacity of 40 liters and used to store ale, whereas, a Quarter cask is a quarter size of the American Barrel and has a capacity of 50 liters and Scotch and American whiskey normally use this cask to get the intense oak finish.
A Hogshead has a capacity of 250 litres to 300 litres and is used to mature Irish and Scotch whiskey as well as wine and beer.
A Barrique is a type of a cask which has a capacity of 300 liters and is popularly maturing French wine and Cognac.
A Puncheon has a capacity of 450 litres to 500 litres and is used to mature Rum and Sherry.
A Butt has a capacity of 500 liters and used to store Sherry.
A Port Pipe is a tall cask and wide and rounder with a capacity of 650 liters and essentially used to mature or store Port.
A Drum has a regular capacity of 650 liters and used to store Madeira.
A Tun is roughly having a capacity of 980 liters and generally used for fermentation of beer.

‘Vampire Diaries’ actors Damon & Stefan Salvatore, on their new bourbon Whiskey brand:
‘Our soul is in this bottle’
For actors Ian Somerhalder and Paul Wesley whose character name in vampire’s diary series was ( Damon & Stefan Salvatore) the reason for launching their own bourbon liquor brand is personal. The two have been good friends since playing brothers on “The Vampire Diaries.” Even though it’s been four years since the popular CW series wrapped, the co-stars remain close — so closely knitted, that they co-created a whiskey brand called Brother’s Bond Bourbon.
“We drank bourbon on the show,” Wesley (Stefan) told Yahoo Finance Live. “Ian and I drank bourbon offscreen when we finished work. We fell in love with bourbon. We shot the show in the South, and so, this is extremely organic to us. And it’s something that just makes perfect sense.” Ian Somerhalder (Damon) added, “This [bourbon] was over 10 years in the making. This guy (Stefan) and I spent so many hundreds — well, thousands and thousands of hours on the set together. And this is the most authentic thing that we can think of doing. Our soul is in this bottle.”
When the bourbon launched in May it sold out online within days. Since then, Somerhalder says they have sold 50,000 cases of the four-grain straight bourbon whiskey which retails for $39.99 and is sold online and in major chains including Albertsons (ACI), Trader Joe’s and Walmart (WMT). Wesley (Stefan) said the two had “a lot of time on our hands” during the COVID-19 pandemic and decided to put their business plan into action. “I mean, obviously, it was a horrible time, but at the same time, it forced us to sit in our homes, get on our Zooms, talk every single day, and develop this product. Ian and I live close to one another,” said Wesley. “So I went to Ian’s. We blended this bourbon together in his living room.”
Wesley added, “Most people — and I’m not saying specific names or anything, but most people will slap their names on a bottle and sell a product that they really have no part in developing. Everything you see here, from the label to the name, to what’s inside, to the bottle, was designed by Ian and myself and our team. And so for us, this is extremely organic.”The pair’s “passion project” is also about giving back with an eye toward sustainability. The brand donates a portion of proceeds to regenerative agriculture, and their goal is for the brand to be carbon negative.
“The future of business are the companies with triple bottom lines,” said Somerhalder. “People, planet, profit— end of story, right? We obviously know scientifically regenerative agriculture can stop climate change in its tracks, so we are doubling down and putting our money where our mouth is… We are an agricultural company. And we are going to make sure that we invest heavily, heavily, heavily in regenerative ag[riculture] by sequestering enormous amounts of carbon dioxide and storing it safely back in the ground where it belongs.”

Somerhalder explained how the label, which features two men sitting under a tree, is “super symbolic.”
“The brother’s bond is the anchor that holds this big, you know, organic structure in between the boys.
